Ciabatta Bread

 

Ingredients

350g              Flour

280g              Water, warm

1 tsp              Salt

1 tsp              Yeast

 

Process

1)       Dissolve yeast and salt in water.  Add in flour.  Cover bowl and rest for 30 min

2)       Stretch and fold, rest 30 min.

3)       Stretch and fold, rest 30 min.

4)       Stretch and fold, rest 30 min.

5)       Turn out on well-floured board.  Dust and gently spread out to about 2” thick.  Roll into long roll.  Divide into three ciabattas.  Place on floured surface, cover and proof for 45 min.

6)       Preheat oven to 450°

7)       Gently move on to parchment paper, forming into rectangles.

8)       Spray with water to make steam, bake on cookie sheet, 450° for 10 min.

9)       Then bake at 400 for another 12-15 min.
