Burger Buns

Scaled to make 6 buns

Based on THE BEST SOURDOUGH BRIOCHE BUNS - PERFECT BURGER BUNS from The Bread Code on Youtube (https://youtu.be/Dx7xM8IThCI)

 

Ingredients

400g              100%     Bread Flour

220g             55%       Milk

40g               10%       Starter

80g               20%       Butter

40g               10%       Sugar

8g                 2%         Salt

8g                 2%         Yeast

2                                   Eggs (one for dough, one for egg wash)

 

Process

1)     Mix all ingredients together.  Cover and rest for 15 min.

2)      Bench knead w/o flour for a couple minutes until dough becomes a little less sticky.  Rest covered about 30-60 minutes until dough roughly doubles.

3)     Prep a baking sheet with parchment paper.  Dust with flour, divide and shape into balls.  Place on sheet, cover and rest for about 30 min. 

4)    Preheat 400°F.  Apply egg wash (equal parts egg and water) and sprinkle on sesame seeds.

5)    After Oven is ready, bake 400°F, 15’.  Rotate tray and bake an additional 10-15’.
