Beef Goulash - Southwest Style

 

Ingredients

1-2 tsp          Olive Oil

1                    Yellow Onion, Chopped

1 lb.               Lean Hamburger

1                            Bell Pepper, Chopped

2 cloves        Garlic, Minced

1 tsp             Salt

2 cups          Elbow macaroni

1 jar              Marinara Sauce (Mezzetta is good)

10oz can      Rotel, Hot

15oz can      Beef Broth

15 oz can     Pinto beans, drained

2 sm. can     Sliced Black Olives, drained

AR                  Cheddar, Shredded

 

 

Process

1)     Sauté onions until soft.  Add in garlic, continue sauté until garlic smells good.  Add in hamburger and bell peppers.  Continue cooking until hamburger is just  browned.

2)     Add in everything else except black olives and cheese.  Heat up and simmer for about 15 min.

3)    Add in olives and simmer for 5 more minutes, or until macaroni is done.

3)     Serve in bowel w/ cheddar on top, as required.
